Colbert HCE members discuss making pretty pies

ADA — Colbert Home and Community Education members discussed making pretty pies at its June 17 meeting.

Elaine Sundquist, president, presented the lesson. She distributed a handout to each person, which gave a recipe for a flaky, tender pie crust and another for a crust made of graham crackers, vanilla or chocolate wafers or cookies. The handout also included recipes for two fruit tart pie fillings.

She gave brief history of pie making, describing how the first pies made were savory meat pies, and the crusts were tall and straight-sided to hold assorted meats and sauce components. Some had sealed tops. These were baked like a modern casserole but with no pie pan ... the crust itself was the pan and the pastry was tough and inedible. Pastries later developed into a culinary art form. Enthusiastic pie-makers have their own favorite recipe for pie crust and Sundquist shared hers.

Ways to make pies attractive included tips on various types of curst edges and tops.

Joyce Jared was host for the regular meeting of Colbert HCE. She read a devotional message from the book "Ending Your Day Right" by Joyce Meyer.

Pledge of Allegiance was led by Rozale Welch and members read the OHCE Creed in unison. Ruth Janik called roll and each person responded with the name of her favorite pie. Bernice Patrick gave the treasurer's report.

The Quilt Show on April 24-25 was discussed and Janik showed members pictures which had been taken there. Sundquist announced the Oklahoma Home and Community Education state meeting was scheduled for July 12-14. She also said the Leaders Lesson for the July meeting was to be a joint one attended by Hughes, Seminole, Pottawatomie, Murray and Pontotoc counties. Pontotoc County Council meeting will be held in late July. The 2010 Southeast District Meeting will be March 16 at Murray State College in Tishomingo.

Attending were Elaine Sundquist, Rozale Welch, Bernice Patrick, Joyce Jared and Ruth Janik.
